Azolla is an aquatic fern rich in proteins (25% DW), and in symbiosis with the cyanobacterium Nostoc which fixes atmospheric dinitrogen gas for the plant. In combination with its fast growth rate Azolla has potential as a novel sustainable protein crop, yet its high proanthocyanidin (more commonly known as tannin) content complicates protein extraction. That is why we examined which proanthocyanidins are synthesized in Azolla, and how.
